Ingredients
  

  • 4 cups skim milk
  • 1/4 cup lemon juice or vinegar
  • 1/2 teaspoon Salt

Instructions
 

Heat the Milk : Pour the milk into a saucepan and heat it over medium heat until it reaches 180°F (82°C). Stir occasionally to prevent scorching.

    Add Acid : Once the milk reaches the desired temperature, remove it from the heat and slowly stir in the lemon juice or vinegar. Let it sit undisturbed for 10 minutes to allow the curds to form.

      Strain the Curds : Line a colander with cheesecloth and place it over a bowl. Pour the mixture into the colander to separate the curds from the whey. Let it drain for 15–30 minutes, depending on how dry you want the texture.

        Enhance Protein Content : For an extra protein boost, mix in 1–2 tablespoons of protein powder while the curds are still warm.

          Season and Store : Add salt if desired, then transfer the cottage cheese to an airtight container and refrigerate.
